If you are wondering that I have been doing lately, here is a quick summary.
- Trying to grow a small orchard in the Sonoran desert. I am up to 9 trees and 10 varieties including Dabinett, Harrison, and Franklin.

- Testing new Cider Yeast (non-Saccharomyces) Strains Torulaspora microellipsoides and Metschnikowia pulcherrima.

- Obtaining additional Cider Yeast samples to test including Hanseniaspora valbyensis and Lachancea cidri, which are both commonly found in French keeved ciders.
- Continuing to develop and validate my process for creating a stable cider that has residual sugars most home cider makers could follow. I am on my second season with 100% success.
- Started working on my new book, that is currently focused on true Cider Yeast.
